This color ranges, so when you see a red, orange, or yellow fruit or vegetable it has beta carotene in it! Think sweet potatoes, red bell peppers, carrots, mango, and papaya. Even some green vegetables have beta carotene, but this is masked by the darker green color of chlorophyll. I love to eat papaya fresh. But when I can’t get it fresh, I’ll add papaya leaf extract to my smoothie or oatmeal.
